Cheating is hardly ever appropriate, but there are a few exceptions to the rule. You can cheat death, and that’s considered a good thing. Sometimes, you can cheat in baking and still have a good outcome… like this Cinnamon Roll Casserole.
I use already-made, refrigerated cinnamon rolls and just embellish them for a scrumptious baked breakfast. And the best part is that I’m not in the kitchen half the morning and can spend time with the ones who matter most.
Similar to the Baked French Toast Casserole introduced on Day 6, this breakfast casserole is another great dish for Christmas morning. You can prep it the night before and bake it in the morning, but it’s also easy enough to whip up the morning of. After all, you don’t want to miss all the Santa-induced excitement!

I make these cinnamon rolls on cold, snowy days, too, for a toasty sweet start to the day. It’s like cinnamon rolls and french toast had a baby. Yum!
My photos show a half portion for my little family of four, but the recipe below is adjusted to include guests. (My photo also shows half with chopped pecans and half plain, should you have some choosy eaters, too.)
I serve the cinnamon roll casserole with a side of Jimmy Dean turkey sausage for a lovely salty-sweet kick and everyone cleans their plates. I hope your family will, too! Enjoy! — v.

Cinnamon Roll Casserole
Ingredients
- 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
- 2 Tbsp unsalted butter, melted
- 4 eggs
- 1/2 cup half-and-half
- 2 tsp ground cinnamon
- 2 tsp pure vanilla extract
- 1 cup pecans, chopped
- 1/4 cup maple syrup
Directions
- Step 1 Preheat oven to 375 degrees F. Place butter in 9×13″ glass baking dish and set in oven to melt.
- Step 2 Separate both cans of dough into 16 rolls. Set icing aside. Cut each roll into bite-size pieces and layer over melted butter in dish.
- Step 3 In a medium bowl, beat eggs, half-and-half, cinnamon and vanilla until well blended. Pour evenly over roll pieces and gently toss to combine. Sprinkle with chopped pecans and drizzle with maple syrup.
- Step 4 Bake for 25-28 minutes, until golden brown. Allow to cool and set for 15 minutes before serving.

When ready to serve, remove covers from icing and microwave on medium for 15 seconds or until thin enough to drizzle. Using a whisk or fork, drizzle icing over the top. Serve with additional maple syrup, if desired.
